Engineers and mechanics work the same as vanilla ones, and the Rhaiod crewmembers are just healers. Thelean crewmembers are all combat roles, as are the rimdwellers and the Avikan rogues.
As for the uniforms, races with unique body shapes sadly have to have preset outfits. The tailor doesn't take race into consideration, so changing the uniform for Avikan while you play as a Human (for example) would make your Avikan crewmembers wear human clothing. Since the sprites are so different that would end up looking very odd and to prevent this, they have preset uniforms.
