For inspiration, the trading card game Yu-Gi-Oh! has 'Eldlich, the Golden Lord" and his gold madness, and that feels quite appropriate here. Not saying I'd like to see him in Starbound, but the concept is pretty fleshed out and could be used for inspiration.
I think the obvious route would be for the boss to be a play on King Midas, no matter what though.
As another measure to dissuade would-be looters from stealing his loot, perhaps he drains your pixels at a rapid rate while alive, and defeating him is required to mine the planet. When he is defeated, he might also drop some unique treasures of his own.
Once the boss was defeated and you mined the first bit of treasure, you might stir up an Erchius Ghost-type perpetual threat, something to make the planet still interested and a bit of a hazard after he's gone. It turns out that even in death, his avarice is unending!

Take out the random enemy, critter, and bug spawns. Remove all of the ores, and replace them only with fitting ones. (Gold, silver, diamond, etc.)
Make the money madness much more devastating, to avoid players beaming down to collect things only to die/beam up and repeat. Dealing with the money madness can be done by finding a special crown item as treasure in the world, or by crafting it with many valuable treasures before taking on the planet. Perhaps give the planet block protection unless you have defeated the-

A lot of people do use this planet as a way to test their combat skills, I've noticed! Pretty fun!

If it's too much, there's always the Money Planet - Decreased Spawnrate .
okay so the entire planet will be underground there is a surface but it isn't interesting underground you'll find randomly placed rooms sometimes with traps and enemy's n stuff tons of loot but the deeper underground you go the more loot you get and the more dangerous it gets,
i wanna see this one day and i haven't found it anywhere so i hope someone sees this and creates this weird planet type.
oh and the surface is like a barren planet covered in random ruins that have 0 loot what so ever.
It's not just the the planets are beautiful, which they are...
It's not just that you need a special EPP, which makes complete sense...
I love the continual combat! While you can get the money planet without the mobs, why would you? It's great because it makes sense that other people couldn't have completely looted them without dying for sure.
It's also fantastic for one of the best mods I highly recommend, which is "RPG Growth." You can get lots of experience quickly and there's plenty of pulse-pounding combat even when you are a high level. It's better than some boss fights and it lets you test out your builds in terms of gear, skills, and stats.
Those things are heckin expensive to make on one's own. :'/
That's an idea if I manage to come back to this mod in any capacity..!
