For inspiration, the trading card game Yu-Gi-Oh! has 'Eldlich, the Golden Lord" and his gold madness, and that feels quite appropriate here. Not saying I'd like to see him in Starbound, but the concept is pretty fleshed out and could be used for inspiration.
I think the obvious route would be for the boss to be a play on King Midas, no matter what though.
As another measure to dissuade would-be looters from stealing his loot, perhaps he drains your pixels at a rapid rate while alive, and defeating him is required to mine the planet. When he is defeated, he might also drop some unique treasures of his own.
Once the boss was defeated and you mined the first bit of treasure, you might stir up an Erchius Ghost-type perpetual threat, something to make the planet still interested and a bit of a hazard after he's gone. It turns out that even in death, his avarice is unending!

Take out the random enemy, critter, and bug spawns. Remove all of the ores, and replace them only with fitting ones. (Gold, silver, diamond, etc.)
Make the money madness much more devastating, to avoid players beaming down to collect things only to die/beam up and repeat. Dealing with the money madness can be done by finding a special crown item as treasure in the world, or by crafting it with many valuable treasures before taking on the planet.
