I tried again once and everything looked great until the pirate faction showed up with pistols.
For the base of my current Medieval playthrough, I’m using this collection:

I don’t use all the mods that come with i some are turned off purely based on preference.
Also, make sure to replace the Tasty Armory mods with the updated ones.
I added some other stuff along the way, but there’s nothing in there that you quote-unquote need.
It sounds like you just need to get rid of the modern factions. You can achieve this by using Faction Control to remove them before starting a game, or by using Rimedieval, which is a mod that blocks out all modern tech.
That might help but its hard to fix stuff over text.
If that dose not help just ask again we will get this to work for you one way or another.
As I said, I recommend using Rimedieval and Faction Control with Medieval Overhaul as a base for your mod list. Those three should set the right tone. What you add on top is your choice. Just make sure the mods you add are compatible, up to date, and ideally fit the medieval theme (tech wise, so nothing gets overwritten).
If you have your mods ready and still face problems, just ask again. I wouldn’t mind even helping you via Steam or a Discord call.
Last note: The mod list I posted is of course not up to date at this point.
