Balance Suggestions
If something takes too much or too few resources to make or needs any other kind of tweaks then let me know. I'm interested on how this mod influences different kind of micro economies in game.

Mushrooms can be stomped straight to yeast? That's.. pretty wild. The normal way to acquire yeast is to ferment things that have yeast on them in a way that encourages them to propagate, or to provide an environment for wild yeast to propagate such as from grain or fruits, and then take the starter or yeasty liquid and dehydrate it one way or another (dry thin sheet at room temperature or very low oven temp perhaps to speed it up) and pulverize it into powder. Would perhaps be more balanced if you do something along these lines so it isn't too trivial.

White vinegar is made from grains IRL, and other vinegars can be made from fruit (but will have some less neutral flavors to them) as well as vegetables like in this mod. Seems a little odd to lock it to vegetables added after ethanol production, anything fermentable by yeast can then be fermented further by acetobacter either as one continuous process or two.

Yeah I know. I learned how everything is made irl first and then started to decide how important individual items are in-game. I didn't want to make everything too complicated. Like I skipped a step with animal fat - it too could ideally be acquired straight from the animals, but instead I went MEAT to TALLOW. But yeah I will come back to it once bulk of my other overhaul mods are done.

Tallow seems a bit too low in calories and fat and seems to weigh too much.

Calories/Fat and such are a rough average on different meat types that tallow can be made of - tweaked it a little. Made tallow half as heavy as well.

Yeah I planned adding both, along with some other vanilla meat related simple-foods bit later when my overhaul mod list gets done.

Contrary to canning, where it requires units of veggies or meat, jars will ask for quantity of the veggies, regardless of their status. For example, instead of the value of 5 eggplants (with high cooking skills) it can take a 5 rotten eggplants and create a jar of 5 fresh ones.

Good point. But that's a vanilla mechanic. But did you actually tested it? I should probably overhaul that too.

Yeah I remembered correctly after testing it again - vanilla jars will save the food condition and give that item back after opening the jars.

I can confirm that this jar of Eggplants returned 5 fresh ones, while it used rotten ones to make. Maybe it's another mod that could be interfering, but it does involve items tagged with this mod from A to Z of my test.

Regarding stomp mushrooms into yeast, it takes entirely too much mushrooms, or the recipe itself is bugged. I'm sitting here with over 80 mushrooms of different varieties, all of which are more than the required units, but I cannot make the recipe. Even 30 mushrooms of the same type isn't enough.

Juice making should use less materials. Got only 1 bottle of juice from 6 plots of strawberries with your harder farming mod.
