Peace ruling the land
I've gone through three playthroughs with this mod now, and each time it makes Kingdoms peaceful with one another - the only inter-faction war seems to end up being once I declare a Kingdom or take over a Kingdom and then everyone declares war just on me. Are there any solutions to this as at the moment it is faaaar too peaceful!

Have you tried lowering war cooldown?

I have set it to 10 days, yet it still seems that the Kingdoms don't want to go to war with one another at all.

Unless they all have Non-aggression pacts with each other, it's not a Diplomacy issue. Diplomacy does not change the logic that determines whether a kingdom wants to [declare war / make peace] or not.
