The Star systems aren't so important as the planet to be setup on. However, it is again a personal preference. For me, if I setup on a planet, I want a little action while there. Others like to setup on planets were it is 100% peaceful.
If you go to the start system SMBH, there is a lovely planet there with tons of aluminum, gold, and platinum, and only NPC creatures like raptors and spiders.
My other choice is the Temperament Rainforest planets, plenty of trees, water, and resources with some Drone activity as well, as POIs.
I only play on servers now, my preferred setup is a CV as my base. So, I can go at a moments notice.

1. place in VERY CLOSE proximity to the star, star luminosity does not matter at all;
2. renewable water in the star system somewhere. Renewable means that ice asteroids do not count;
3. no hostile presence at all.
That means that best by far base location is UCH research ship close to the star. I think that in starter Delta system irrespective of your seed, UCH Odyssey matches that description.
Why setting on a planet is a bad idea - energy and gravity. Energy, because planetside you will always get less than solar in space (have not tested new RE pieces though, wind and geothermal). Gravity because in space you can easily overload your ship and still dock, while in a gravity well you will crash instead.
Water you get insane amounts from mining dense ice - but it is not water that you need actually, it is hydrogen and oxygen. Mostly hydrogen.
If you can find system which satisfies above points but also has aluminium, then your autominer runs will become easier. But it is not easy to find such system in my experience.
Aargh, if you find that main planet in the SMBH, which is only one SBMH in the Galaxy...aka game, it'll have all those resources plus Voidum, on planet and has a beautiful atmosphere. However, in SP player, resources are 1 and done, but on server systems, the Admins regen playfield recourse either once a day or week. So, that is a good planet to always at least setup a mini-base with teleport for drop AMiners and park a simple mining SV. Also, sometimes the game when it gens the playfield for that planet orbit, it'll drop a UCH vessel as well.
On my server Gaia and Persephone are special "starter" planets. They are set up as an overflow for Haven starter planet. You can't select and start on them when you create a new game, but theirs's portals near where you land on Haven to go to each of them. (in case someone starts on Haven and it's full of bases.... and resource depleted... which is often on multiplayer servers)
On my server because Gaia and Pesephone have these 'special status' they don't wipe the portable constructors, POIs and mining nodes like they do the rest of the starting planets every week.
As far as where to get Erestrum and Zascosium - barren metal planets, wrecks in space and on planets, (any thrusters are what you are looking for in the wrecks), also just exploring 2-3 jumps from the starting Alpha and Beta systems will usually give you some luck. Dead planets are great for finding loads of resources. I've found that finding Erestrum is easier than Zascosium.
