I've found forcing the AI into attacking a fortified position helps immensely, like Mandalore, Sluis Van, or Muunilinst. Ion Cannon (or other ground weapon if BS) to pin the larger ships, various stations to either tank or provide dedicated fire support (depending on fleet composition)
Don't bother separating out the bombers, as you'll need every fighter you can get to handle the Imperial fighter swarms you'll be dealing with. And ensure the fighter engagement happens on top of/next to your fleet, so you have the advantage of the fleets lighter weaponry.

Sounds logical enough. I found stations like Golans and XQs a bit underwhelming, but I guess they are meant to tank rounds for the fleet rather then to deal with attacks on their own

Of course, if the carriers have any bomber wings, those will be a threat to the corvettes and you will need to respond accordingly. Use your fighters to screen the bombers. If the carriers only have fighter squadrons, then you can just jump your corvettes on the carriers right away.
Once the carriers themselves are taken care of, the remaining fighters won't be that big of a problem since your fighters will be better and the corvettes that destroyed the carriers will also have some anti-fighter weaponry for support.
Bulk Cruisers can also perform well in these battles if positioned and protected well, but they are slow and vulnerable to heavier imperial cruisers and capitals.
Just make sure to kite the fighter swarms away from the carriers as much as possible, the flak from the Ton Falks can cause you some headaches. A-Wings make for great kiting rabbits ;)
Nebulon-Bs and Neutron Star Cruisers are also really helpful. Mix in some bombers and an ion cannon and boom boom.
