I can't speak for all modders, but I believe most of us simply repurpose models found for free online. At least that's the case for me. Thus I'm unable to create some of the mods I'd want to, simply because I can't find any good 3d models (and I'm not skilled enough to make one myself).
As for riders, UEBS2 doesn't have any native support for other creature types than humanoids. Thus any cavallery would need to be manually animated by the modder. It can be done, and some great modders have created a few cavallery units, but its time consuming and quite difficult.
That being said, I'll see if I can find any of the creatures/items you mention :-)
