It's a feature that has yet to come. The developer of this game is toying around with the idea to 'build' trains by picking cars and locs individually like in most other games. (or something along these lines)

How can you make train scheme to build?

@Timcool as a matter of fact the EW IV based InterRegio and InterCity trains can include pretty much any SBB passenger coach
i think it will be easier to build them to reality once the Dev has updated train schemes to allow players to build their own trains from existing coaches

Interregio can also use the panorama coaches

Also the panorama car is used in that config. Though I'd argue that is getting very close to the EuroCity train.

yeah, I'm sticking to second class only (unless it is a special car) for now until the game supports 1st and 2nd class. (which I honestly think it never will?)
It doesn't really make sense to me to make you pay more for lower capacity cars.

Well your mods have most only second class and not every having first class.
