S means its built for mobility (normally a lighter stock that's foldable, best for paratroopers) and U means its been shortened for SMG-like use (usually a castrated handguard and barrel)

an AKSU would be an AK that has a foldable stock and short handguard/barrel, and would definitely be used specifically for CQC, something that you're gonna do A LOT in stalker SoC and CoP

some make the AKSU(the SU version of the AK47) a unique gun so if you cant kill the guy that have it, chances are, you're never gonna see and shoot with it
