Although simple concept I see a lot of people have more trouble with this phase than what I'd expect. Weirdly I've always thought Plantera's second form was the easiest part of my mod, since I can routinely beat it without any trouble; but I have beaten Sans Undertale several times, so maybe my perception of this kind of gameplay is a bit warped when it comes to difficulty.
Unfortunately that is just the nature of Cursed Mode: it demands absolute Mastery from the player and never holds back for a bit; If it's demanding too much from you, I get it. There are plenty of challenges I've given up on because I couldn't beat them, or simply wasn't willing to put in the time to beat them. But just in case I've linked a video of somebody beating it below; just seeing how someone else does it might help.
