I hadn't considered that some of the options are too long for the UI to display! Thanks for the heads-up, the next mod update should make crafting amount options shorter and more-intuitively named.
In the mean time, I recommend getting Configs Extended by Remi. It makes selecting mod options much easier, and gives the UI a lot more room to work with:

It's also possible that the mod download from Steam Workshop somehow became corrupted, preventing Klei's code from properly parsing it. - Unsubscribing from the mod might not be enough to remove it from your game. and Steam Workshop can choose one of several different directories to store the mod in, such as:
Steam\steamapps\workshop\content\322330\2908550074
Steam\steamapps\common\Don't Starve Together\mods\workshop-2908550074
(windows)
If you can find the mod folder with 2908550074 in its name and delete it, it should actually remove the mod from your game & hopefully allow you to play again.

I'm very sorry this has happened. I've never seen anything like this before.
I have a couple ideas as to how you can fix the issues you're encountering:
In some cases when this mod crashes, it generates insanely large log files. It's possible your game is getting stuck on one of these & refusing to further load.
Solution 1: I suggest navigating to your Klei\DoNotStarveTogether directory and deleting any server/client logs that seem unusually large.
I was going to suggest validating the game files, but it looks like you've got that covered.
Solution 2: Back up your save files and then reinstall your game entirely.
I am, once again, dreadfully sorry that my mod has caused harm to your game. If none of these solutions work for you, you may need to contact Klei or Steam for further support. It is possible that this is a Steam Workshop issue.
Again, this mod is uninstalled, I hit START, and 45 minutes later my game still hasn't loaded. What's the solution?
