If you create a second mod list, you can easily swap between them. Just go to your Kenshi installation folder, open the data folder, and make backups of mods.cfg.
You can keep one for normal Kenshi, and one for Kathun. Whenever you want to swap, just copy the text in the backup and override mods.cfg
I don't remember if i had the same issue, but you can drop food on the ground and your rancor will path over and eat it. Although i don't think it will eat every type of food dropped.
There is also a mod that adds a Rancor backpack and that might make it so you don't have to micro it's food needs.

Something I've heard but haven't experienced myself is that the recruit event spawns an actual squad, and that squad can be destroyed en route. As with vanilla, multiple locations might cause destination issues, and isolated outposts can be more dangerous.
Do you actually have an outpost? I haven't looked into the requirements beyond that, but the recruit visit should appear in your Faction menu as an upcoming event.
