Hey, you can start a ticket if you want, but I know how to solve both the Cannon Wars and Headcrab quest for you. I opened a support ticket and the guy was able to both replicate the issue and find a way around it.
So, this is likely a result of you having the five-fingered hand model on your avatar in Steam VR Home. Go to your default home setup, whichever one it is, change your avatar's hand from five-fingered hand back to the single hand, and now you can go back to the Valve Lobby and Cannon Wars environments and finish those quests. When you approach the Valve, the Headcrab now unlocks. And on Cannon Wars, you can operate the cannons using the non-five-fingered hand. Also, just so you know, the bricks are definitely possible to knock down on Cannon Wars to get to the treasure chests...it just takes knocking each brick down one at a time with a really-well-placed shot at the tippy top that teeters the brick over. Or, you can get lucky and the cannon ball can glitch through the cracks between the bricks.
