Changing Crew Jobs?
I don't want to dismiss anyone because Im worried I won't be able to bring them back for a different job.

You could do this in the earliest version of the mod but it was buggy since it duplicated the crew member. I think the changes I made in 1.1 should have fixed that bug but I haven't checked.

I'll check and add it in an update if it works.
