You might need to unlock "Training Dummies" and maybe get into Tech Tier 2 if you haven't already. I'm not sure of your current Tech Level, but as you progress through the tiers, it will unlock a *lot* more things to research lol
You can check out the Mod Page too, although it could've been moved around through various patches on the list.
This collection uses a couple of "Category" fix mods which tries to make the Research/Build menu condensed down, as it does get a little wild once you've unlocked a lot of things lol
I think the Training Overhaul Patch might re-sort the various equipments into a singular category for building/research. I'll need to open the .mod up and see exactly what all it does.
I might look into the .mod file when I get a chance to see what's causing the gym equipment to disappear. It's probably missing a link to the build menu or something, which causes it not to show up if everything is researched.
