For an example, I can look at my "Carnivore Fine Meals" bill. If I set it to Automatic, it says "Counting: Carnivore fine meal (filtered)". If I hover it, it says "Carnivore fine meal that contains:\n meat\n and does not contain:\n human meat\n insect meat\n twisted meat". (for the record, from here on I'm going to leave out newlines). In this mode, it's finding 1/20 carnivore fine meals.
If I change it to "Vanilla", it shows the 177 that I have (because my cooks have been going wild since the bill messed up).
If I change it to Custom, and leave "meat" unchecked in both Yes and No, but set human, insect, and twisted to No, then the filter shows "Counting: carnivore fine meal (filtered)" and hover says "Carnivore fine meal that does not contain: human meat, insect meat, twisted meat". This *also* properly shows my 177 carnivore fine meals. My meals contain a mixture of chicken meat, muffalo meat, and beef, so it does not (at least here) appear to have anything to do with modded ingredients (the save as a whole is very modded though).
I hate trying to deal with the Meat defs since they are all created in C# at runtime. Trying to track down what values the various defs have when the game is running has been impossible for me.
