I added the Jetta mod in my already existing save to see if it would spawn with any luck but now i'm stuck with that weird model on the golf even if I disable the Jetta mod on my save

I've had a similar problem while making jetta but it didn't show up later, I'll fix it in a minute

I think you need to expand the interaction box of the trunk a little. If you stand as close as possible to the back, you're already standing outside of it.
