I don't know about Grail Guardians.... They are actually pretty good. Sure they are not the best damage dealers, but probably the only Cavalry that you can stuck into a long melee fight against elite infantry and not melt.
As for Grail Reliquaes, probably better aura and an active buff to nearby units.
Knight Errant is possible I guess, but their role would be the same with the pegasus knights. I need to think of something that differentiates them.
As for buffs against norsca, I am not a big fan of buffs against certain races because it always feel like a waste when I am not fighting said race. I might make a dilemma and let player choose buffs against Greenskins or Norsca/Chaos since these 2 are the campaign goal of him.

Could also be a debuff aura, yes.
I am sorry but I think this is really inappropriate. Grail Knights/ Guardians are Doomstack units themselves. In fact, when I try to decide how much buff I need to throw on an Melee Cavalry, I always use these 2 units as my references. (Also having >1000 Grail Knights within one army is also not really lore friendly)
Paladins are heros and are strong units. Again, I want to buff weak units so they are usable in the late game. Buffing Grail Knights/ Paladins don't really increase the diversity of your army composition.
Other bretonnia cavs are also good for their tier but they do fall short in the late game where you can get Grail knights.
