Stratford is two or three stops away down the main line, so finishing to that would be a good terminating point as it's on the GEML and also intersects with the North London Line (Stratford terminus). The natural full journey involves Liverpool Street in London at the start of the GEML itself provided it can be merged in.

I do think renaming the Cambridge portal to reference the next station is a good idea for consistency. That way, any changes made going forward can incorporate that and, should we head to Cambridge, that portal can be maintained once the line north is added. A couple sets of portals also need to be merged as multiple portals on a junction just clutters things up; putting a single portal for them makes more sense to me.

It would be nice to see a QD for the Hertford branch. I live along it so would be nice to drive on a QD instead of Free roam

This is planned! However currently there is no scenery along the line, but watch this space :)
