Apparently, in the base game most of these animals won't eat. I found a mod that fixes this issue, though not perfectly

Animals still won't eat from inventory, but will eat from food stores, troughs, and food on the ground.

Also animals will eat things alive if that's normal for them, but it doesn't actually replenish their hunger
