(similler error log, the planet has "corrupt_data_cat" anomaly before it is removed.)
To make sure, can you send me save files that show the issue, ideally one before and one after? It will be too complicated for me to reproduce the problem by myself, so I can only guess what I need to change to fix it.
1: point a planet or moon (one in starting system is fine).
2: execute "add_anomaly corrupt_data_cat" on console. "corrupt_data_cat" anomaly will be created.
3: execute "tweakergui instant_anomaly_research" on console.
4: search the anomaly with your science ship. The research will be finished and run distar.1065 event.
5: This event removed the celestial body.
6: save the game.
If Stellaris Dashboard data update was done before procedure 5, procedure 6 will cause this error.
