To manually change the values for growth time, or crop yield; the mod contents on your PC are located at "Steam:\steamapps\workshop\content\workshop\294100\932373937"
Edited values of workshop content will be reset on updates. A patch is the only way to avoid this.

For the growth times, I did balance the rates so it grows faster than the other crops, but needs more plants to sustain colonists. I'll look into adding some way to customise it.
Lavish/Fine meals made with Tofu count as vegetarian which is great!
Pawns automatically use Tofu as a protein which is great!
But they also use Tofu as a vegetable which means they're making "meals" that are nothing but tofu and it's very strange. Without a way to manually set ingredient portions this feels a bit silly.
Also is there any way for me to edit how long the soybeans take to grow on my end? They grow so quickly that they feel a bit cheatsy. Since my entire reason for growing them is to replace meat for ideologies that don't like killing animals, I'd like them to be challenging to grow.
I would assume they would see it as meat.
The reason I made the plants grow quick, and give you so much is to make it more difficult to deal with.
If you were wondering, you need 22 soy plants per colonist.
To answer your question, yes it should work fine, and soybeans can be grown on hydroponic beds
I might mess around with the nutrition and yield values another day.
