In modeling polygons (generally triangles or 'tris') are used to form the actual shape of the model, the more polygons a model has, the longer it takes to render as there's more the computer has to process.
Games use LOD's or 'Levels of Detail" so that once you're a certain distance away from a model, a lower poly version will load, thus reducing the stress on your system while not sacrificing much quality.
Also the color was chosen to resemble bamboo/grass, if someone wanted it to be red/blue they could just buy team paint as shown in the second image.
