And textures that arent in materials section can be found by using Extended Spawnmenu, then click on materials located at the bottom of the spawnmenu list.

I dont know how to remove objects from a map. You can try use map retexturizer and make the transparency of the material to 0 but it only works for textures on a wall not a model on the map. The only real way to do it is with Hammer Editor program.
