It's the textures, materials, and most critical of all, Ultimate's absolutely horrendous lighting engine and color balance that make so many characters look so terrible compared to Smash 4.
In some ways, SSBU has some decent or even good models, like for example the DLC ones and even some of the base ones like Link, Zelda, Daisy, Roy, Sheik, too many to really say at least in my opinion. but they also have terrible ones like the ZSS, Mario, Luigi, Bowser, Ike, Marth, Pikachu, and especially Shulk in the game, mainly because of the texture work that went into it and the aesthetic/style of Ultimate and how it's a somewhat step down from Smash Wii U
Some fan renders make certain models that I just stated from the game work, but not all of them can be salvaged
