You will need to rebuild your Prof Patchworks. Using a mod like Additional Soldier Commands to run `RebuildSelectedSoldiersClass MZPatchworkProf #` where # is the rank of your Patchwork.
Forgive me if I'm coming across as dense, just trying to wrap my head around exactly what you are seeing so I can look into how the configs may be borked so I can fix it for others who are also having the same issue.

Tried setting Use My Class, set to display 40 choices, but this class never showed up until I did the above. Hope this helps someone if they run into the same issue.
If you want to confirm that it should be working, install krj12's Use My Class, which allows Character Pool soldiers to be the class you choose in the menu. This mod doesn't "force" the class so if it doesn't show up, you can know something is wrong.
