In the local mod you created, in XComGameCore.ini add:
below the header
[PlayableMECTroopers.UIChooseMec]
these three lines:

You should create a local mod making the guide attached. In it you'll need an XComGameCore.ini file, in which you need to copy this block of text

My suspicion is that because MEC Trooper Redux is a newer mod, then its configs to set class correspondence to mecs overrwrites this mod's. If you're willing to experiment try switching back to the old mec trooper mod and see if the problem is solved. If it is, maybe I can help you.

But yes, if you don't want the Pioneer then you don't need the shield and its dependencies.
