Considering color tintability, you need to have the areas that you want to be tintable be in the first material slot - not sure if this can be changed in unity, but it does definitely carry over if you import a .obj from blender or other 3D editor. So give that a try. The advantage with this - you could try to split off all the white surface parts of the car and assign them the first material exclusively, so that way the wheels, lights, etc. stay their original color.
