Props cannot be spawned in by taunts, Valve requires any desired prop to be made by the team making the taunt. They do this with their own taunts as well, Spent Well Spirits uses a nearly identical separate bottle model, instead of the actual weapon bottle. The use of taunt props has virtually no more impact on the game's ability to load assets into memory as your own ram stick's ability to process them, which I can assure you it has no trouble doing.
Weapons also cannot selectively be drawn or not per-weapon, you either explicitly can let a weapon slot be visible in a taunt, or do not let it be visible.
We don't make our own assets just for the hell of it, we're literally not given the functionality to access existing assets in our taunt.
Instead of modeling a knife and bottle for this taunt, just use the eyelander (and possibly even have it replace the eyelander with whatever sword you have equipped) Instead of a beer bottle unique to this taunt, use the bottle from the "Oblooterated" taunt
