For most of the game, my villagers' workload was astronomical, but it didn't seem to degrade their performance too much. I'm not sure why. Also, immigration didn't seem to be affected.
Build a lot of burial sites. You're going to need them!
I eventually got enough resources to buy sheep, and from there the revenue from selling wool funded everything else.
Build fortifications, and as soon as you get the warning that raiders may be coming, ring the alarm and call your people back. I had people collecting plants over the entire board. I lost a lot to cave lions, but I never had food problems and I had some production of beer & straw to supplement what I could buy from the traders.
My animals never had this problem when I raised them close to grassland, only died when I was too far away. Could be a similar problem to @UglyBird getting pathing errors on the map. I'm no expert but I'm guessing different PCs/graphic settings create a slightly different map from the same parameters and this leads to issues.
Sorry I can't be of more help with this. :( I can't really fix the problems people have as I can't re-create the problem on my PC!
I have really been enjoying going through your maps/scenarios. :} One little problem I am running into is the same alci has: my sheep & goats are dying of starvation during the summer. I noted what you said below before I started playing, and my settlement is right next to the largest piece of grassland next to the lake. The stable is built on grassland too. Yet, my extremely expensive animals keep dying. What am I doing wrong?
I don't really know why the issue arises with your. @anbeckma didn't seem to have any problem playing, neither did I.
I tried playing again on different maps and could not replicate your problems at all. I don't have a guy randomly running around with his sledge either. I know people had some pathing problems with other maps I created (people getting stuck on the map, running in circles etc.) but I could never replicate them, it always works fine for me.
I wonder if it also has sth. to do with a person's computer/graphic settings in the game, but I'm not an expert at all.
As I wouldn't know when the issue is fixed as I can't replicate the issue, I'll just leave it as it is, as it works for me and at least some other people. :) Sorry I couldn't be of more help!
Sometimes the error says it is a horse issue, I really think it is a noise amplitude problem.
Another thing happening at game start, 1 pop with a sledge runs half way around the lake then turns around and run to the other side of the lake and repeat non stop.
This is a pathing issue resulting from noise amplitude settings, I had a few of those in my own custom maps.
Adjusting some of the noise amplitudes do fix the issue.
I leave this to your discretion if you are interested in fixing the problem.
I will try to decrease the donkey's number to see if I can get something, will let you know.
I think it has to do with the environment file, I had a look at the settings of the noise amplitudes, with those settings I would increase the "size" value in the scn file from 2 to 3,4 or 5 it should fix your problem.
I will try it myself and let you know.

Have restarted on 3 different starting point and get the crash every time.
