when i put the sentry gun down it worked flawlessly but when i had to put it down the 2nd time (enemies destroyed it) it would just try and shoot the sun.

Wait for update. Currently, if you die while the sentry gun is active, the game no longer reads mouse inputs. You can't spawn anymore
