I have been experiencing the same issue. entities with large amounts of health have a delay between taking damage and displaying it on their health bar, the more health the more time before it is displayed. i call this damage rendering. and unfortunately their is no fix i know of. however i think it has somthing to do with the engine trying to compute large values.
i hoped this gave you a deeper understanding of your issue.

example to what I am saying: let's say there are 2 npcs, one is called SWAT, the other is called OLD SWAT, as in older model. when you spawned them both before the update, their healthbars said SWAT, now it says OLD SWAT for the old one. another example. let's say there are 2 npc again, one is called Phalanx, the other is called Phalanx(no shield), so before the update they were both called phalanx on their healthbar, now the no shield var says no shield in it's healthbar.
this is a bit sucky
