I actually came back to this map and it turns out that there actually IS a version of Hyrule Field with collision in this map, you just have to noclip around and find it. In fact it covers pretty much the entire game besides dungeons, this is a more impressive map than it appears. It's a shame the old version which presumably let you access them without having to noclip seems to be lost.

How do you get into the secret rooms?

If you clip past the invisible wall, the castle section is completely functional as well. Hyrule Field is also mostly modeled but has no collision.
