I had a look at the Manchester stations and they are complicated. Out of the two I'd possibly attempt Piccadilly. It's a similar scale to Lime Street but it has a much more complicated multi-level station front which could cause issues. I can see why these buildings haven't been created in the game.
I like the look of Newcastle Station, it has the classic Victorian front which is about the right size for the asset editor and unique for the game it has curved platforms. it also has the bonus of having a Metro station which makes it practical for the game.
Hebden Bridge station or any other on the Calder Line for that matter might be a good one to complement this!
Leeds Station would be a gargantuan task in its present form... especially once Platform 0 is added! I'd be biased with looking out for Lime Street but again, that's a tricky station to create.

I also really want to reference the Cabbage song 'A Network Betrayal' here so, 'I don’t have time to be hanging around Huddersfield station’s lovely little café. I’m on this train because I’ve got actual places to be!'
@youngbob Huddersfield is one of those towns that has struggled in recent years economically. This station is a reminder of when the town was a key location in the industrial north.
Not impossible to do but they would be sizeable assets in the game. If the demand for them is there I can certainly look into making them.
