I see the same thing, it has to do with monitor resolution. I'll check and see if VRMod has updated any of the window rendering logic so I can fix this

I've found you can drag the window a bit using trigger and moving the controller. It's a little finnicky but will work in the interim

the menu is cut off for me on the right end, so i cant see all the model options. Any tips/ideas?

once you've booted VRMod bring up the quick-menu by pressing the bind (normally one of the face buttons on your controller) and select "Player Model" to bring up the menu
