Look up the top of your engrams screen. There's a row of small icons, you need to click the one with a roof and floor. Uh, temporary solution you could use, S+ does make (all) engrams learnable on other maps. Not sure how long it'll take to get this fixed again. Thanks for reporting

You were on the right mod for the dolphin. They do not spawn on Ragnarok yet.
The magmasars have nests in the Wyvern Trench mostly. It takes a long time before the eggs spawn. About 1 1/2 hours. And there need to be magmasaurs near nests before they will spawn eggs too.
