The map is based on a larger Earth map (can't remember the name) which is why it is a relatively cosy size. The other adjustments you mentioned are all ones that are (unfortunately) beyond my talent!
Also, this looks similar to the ANAC map, is it a copy or did you make it?
I myself have been brainstorming an ideas for a scenario similar to this, but with more civilizations and complexity. I have yet to begin working on it however. Best of luck with this scenario, I hope you continue to work on it!
Also, with regards to technology, you could enable it, but start the Europeans later technologically, and cap it by disabling technologies past the renaissance (or industrial).
I would start Natives in the early classical and europeans in the late midieval. Natives would need some way to catch up however, possible tech trading (as seen in the Civ IV diplomacy). You could also try implementing the DLC tech tree.
If I were you, I'll go looking the kevincbryan Pacific War mod, his file for Removing Wonders is very good.
If anyone knows how i can better disable wonders please let me know and i'll try it out.

@The Goshdarn Robin: Trade routes are already in. They are actually a pretty big part of the European game as they allow you to bolster your initial colonies food/production as you see fit and also provide a massive boost to your financial situation through trade with other european civs which allows purchasing of units and buildings.
Ideally i would like to enable gold trading with your own cities, nerf it a little with the other euro civs, and make it so you can only purchase units in your (european) Capitol city.
I've now re-re-uploaded the mod so it *should* have the map as intended, again, please let me know if this is not the case!

@nomadbrad: ease up turbo, this is the first civ v mod i've uploaded, just ironing out the kinks.
@sir loona: religion is only disabled at the moment because i can't figure out how to set up the religions at the start of the scenario. I know how i'd like to have each religion set up but i just can't implement it... yet. :)
