I'm not sure how to convert the provinces - I've followed the instructions, but have been unable to - the only thing I can do is change the duchy coat of arms to match a province's. Any advice?

@Warthog you need to right click on the CoA/Flag of a county level title and it should give you a "Convert Religion" option

Like with the convert province Culture. Please update with reduced values. The cost is crazy.

Changing my personal leader. Like if i am an french king and have an italian country, i can make a direct change to italian due an decision or something.
