I think you're wrong, Jak and Daxter only used lower poly models.

Jak II had a high poly model of TPL Jak in the introduction cutscene... you can also tell by the lack of lines inside his left goggle.

This is from Jak and Daxter, the first game in the series, and is likely ripped using ninja ripper.

It'll be a while until I will want to make Jak from 2 and 3; Trying to make his limbs fit into the Valve skeleton was a little tricky.

@Viper - Daxter would be difficult because of his height; The modeler can't resize the skeleton without the model breaking. It's highly possible with someone that is more skilled.
