Developer Thoughts:
Cheese Farms add a new dynamic to Bretonnia, allowing for a heavy spam of melee infantry in the late game should you focus on this style of economy. However, crossing the peasant economy threshold is now more impactful as the upkeep bonus without it is stronger and cannot easily be supplemented with Autonomous collective, as this technology no longer reduces upkeep for your infantry without committing with your infrastructure buildings.

What does this mean for you?
If you only built industry before, your settlements are now more vulnerable and you will have a harder time affording your armies unless you make Cheese Farms.
If you only built farms before, you will have a slightly better economy in the early game and a slightly weaker economy in the late game, assuming you are still making infantry. If you are not, you will feel no difference.

Battle pilgrims are now more in-line with Men-at-Arms stats wise, which makes a lot more sense within the context of lore/world-building given that pilgrims are not professional soldiers.
