And of course, u can choose never perishing.

I observe no progress with PERISH VERY FAST option.
Carrots from fully green turn into rot instantly at some point but not gradually over several seconds.
I observed this with carrots and icebox.
DST rev. 506376.
It doesn't matter if you watch open icebox or toggle rapidly between open and closed.
