Shake your Groove thing. Note this map has NON interactive cabinets built into the arcade room. You can re-compile the map with the cabinets removed in order to add your own ardcade cabints

If you want to customize this map, you must first decompile it using special tools Here is a tutorial on how to do that https://developer.valvesoftware.com/wiki/Decompiling_Maps

Once your map is decompiled, you use the Hammer map editor to customize your map.
Here is a basic tutorial on using the hammer editor https://developer.valvesoftware.com/wiki/Your_First_Map
