The Qajars -> Iran (For the same reason as Meiji Japan, until we get another modern Persia the distinction is meaningless)
Mongolia -> The Mongols (Mongolia is the name of the modern nation state rather than the empire the game is representing)
The Abbasids -> Abbasid Caliphate (having too many 'The Xs' makes plural culture grouping look like the default naming scheme)
The Normans -> Normandy
The Inca -> Tawantinsuyu (Their own name for their empire, Inca were just the ruling elite the Spanish used as the name entire)
The Achaemenids -> Achaemenid Empire
