I would add the gensokyo mod, it's a mod based on the game Touhou and adds I think 22new bosses, one structure, one new npc, some enemies, more than 200 items.
The only thing that is a bit bad about the mod is that it's built for nohits and results in most bosses dealing almost no DMG, also second issue is that it's a pretty old mod and it's graphics are not the greatest. But it's still a great mod
