I just looked it up to remind myself, and for example, the Chronomancer classes basically say 'if you are NOT an undead, and you are NOT a dwarf, start at Point Zero', while the Celestial classes say 'if you ARE a human, or you ARE an elf, start at Angolwen.' So, the werewolves do get picked up by the Chronomancer logic, but don't get picked up by the Celestial.
The Ashes classes, at least, behave more like the Celestial ones, where they look specifically for certain race descriptors (a pretty exhaustive list of them, in fact) to trigger that starting zone, rather than just looking to see that a character does not fall into certain categories.
Hopefully that all makes sense. I'm sure there would be ways to override that, but I didn't really dabble with altering any pieces of the game's base code.
