Ive not seen or heard of anything for saves. Modding scene here is pretty minimal. Character editor would be far more involved than any octdat mod. There was one a while ago but since the game is EA/Beta, it was broken often and then abandoned.
CheatEngine might be a decent temp solution but they tend to be something that breaks on updates.
You can also change what item comes from digging these substances. For the most part mods can be done by editing the .octdat files. Which are generally easy to work with. You'd just change this line digItemTypeName = Dirt
If you want to get a bit more into modding feel free to hop into the NF discord > mod-discussions, or DM me. A save/character editor is a fairly tall order though.
Are you sure about the mycelium-factor? Sounds like something that might affect the frostcap gathering or is it just the blue dirt-stuff around them?
Yeah, I was selling the extra, but when you can commonly purchase expensive magic items with dirt, it feels kinda... Dirty... :D
I was going to do the value editing myself, because that is the one way you can be pretty sure there are no multiple mods affecting same things and causing problems.
Guess I need to ask the Cheat Engine community about the editor then. Perhaps there is some kind soul who would like to make table or editor that allows changing the pawn stats.
You don't happen to know about any decompiler/decrypter that would change the save files into plain text either? Unzipping makes the files somewhat more readable, but leaves still many unknown characters/strings, which makes editing with notepad++ out of question.
If you want you can easily change this in the mod. Open in text editor or IDE.

Dirt/Grass/Mycelium/Sand Substance produce dirt. Lower value = higher harvest
The current setup rate corrects the problem of disappearing mass, but causes problems when the dirt gets accumulating and soon you have 100k dirt laying everywhere in huge piles, filling up all storage (took a while before I understood the problem with huge empty storage fields and disabled the dirt from their options), so some less excessive rate would be appreciated... :)
