If the bowl were to become better in the late game, I think I'd have to nerf its base value to 0 to match. This makes it much more of an investment item (like coal) which makes it a lot less tempting to pick up in the early game and really forces you to lock-in to getting to at least orange/peach value to start becoming better than the existing version.
I see no reason why it shouldn't be buffed by chefs though - I think I veto'd farmer so didn't look much further, but chef bonuses should be a nice buff.

I think ms fruit is a bad point of comparison, since the bowl is uncommon.
I did toy with making the coin increase match the base value of the original fruit to make it more tempting in the long-run. Even though the higher ranks are often less value gain, combining the symbol into one higher value symbol is arguably better. (A 7 is better than a 6 and a 3.)
In reality most of the time the bowl gets rid of your starter cherry, then even one banana turns it into a 3-per -- which is an insane pay-off for an uncommon. The fact that it can keep getting better and better just makes it have an even higher cap to its potential value, even if that value is rarely realised.
Anything beyond coconut is a 2-per, so I don't think there's that much 'junk' that you accumulate (I would accept that pear is sometimes bad), since the cherry and banana usually clear very quickly.
more importantly though, can you add this item to the 'foods' group? if the chef buff worked that would also be some benefit
