Extract the rar file, ignore the "Alternate Textures" sub folder, unless you really want an alternative texture that is shown in the screenshots.
Also ignore "PNG Previews", that should be the images shown on the mod page.
Then there's the main folder left, there's a few .png files there and the Readme.txt file, the game won't do anything with those, so no need to copy those. The rest are .tga files, you copy only those to your override folder.
There's a few files in there of which I am wondering why they are included (for example an updated Lucas Arts Logo), but they shouldn't cause problems.
My last full replay was in 2017, I've been having more fun making mods than doing another replay. I'm currently replaying KotOR 1, but with long pauzes, whenever I'm in the mood.
I try to keep my mods to a minimum, partly so that I know if the mod I'm making is causing issues and that it's not caused by another mod. I mostly use basic things like TSLRCM, widescreen fix, player head model fix.
